According to USDA reports, beef production in 1994 was 24,386 million pounds, which is estimated to increase to 25,696 million pounds in 2001. This is an increase of 5.4%. Which at a 750-pound average carcass weight, would be a 1.7 million-head increase in production. Contrary to popular belief that per capita consumption has dropped considerably, annual consumption has only decreased from 67.0 pounds per year to 66.3 pounds.
