According to USDA reports, pork production in 1994 was 17,696 million pounds, which is estimated to increase to 19,120 million pounds in 2001. This is an increase of 8%. Which at a 195-pound average carcass weight, would be an increase of 7.3 million head. Contrary to popular belief that per capita consumption has dropped considerably, annual consumption has only decreased from 53.1 pounds per year to 52.3 pounds.
